About Candy

Nearly every word on this page comes down to one variable: how hot the sugar syrup got before it cooled. Fudge and caramel stop at the soft ball stage and stay chewy, while brittle is cooked to the hard crack stage and shatters. Taffy is pulled again and again to fold in air, nougat gets its lift from whipped egg whites, and marshmallow took its name from the mallow plant whose root once thickened the original sweet. Licorice is flavored by a root as well.
