About Vegetables

Vegetables come from every part of a plant. Carrots, beets, radishes and turnips are roots; potatoes are underground stems; spinach, lettuce and cabbage are leaves; celery and asparagus are stalks and shoots. Broccoli and cauliflower are flower buds harvested before they bloom, and pumpkin, cucumber, zucchini, pepper and eggplant are fruits in the botanical sense, since each grows from a flower and carries seeds. Onions store food in layered scales. The grid below hides all eighteen.

Reach for this sheet when a class is studying plant parts, planning a garden bed, or working through a unit on food and nutrition.
